I’ve been going to The Dough Bros every time I hit Galway. Every. Single. Time. It’s just class. 9 times out of 10 there’s a line of hip, happy looking people outside. Don’t be put off. The line moves quick in my experience it’s borderline wizardry from these pizza gos. Stick it out; you’ll thank yourself. You are in line for what some people say is the best pizza in Ireland.

Founded by brothers Eugene and Ronan (great name) Greaney in 2013, The Dough Bros started as a humble food truck with a bold mission: to put Irish pizza on the global map. They’ve nailed it. By blending traditional Neapolitan techniques with the best local Irish ingredients, they’ve gone from streetside slices to Irish institution.

Their dedication has paid off big time. Dough Bros has earned a place among the top 50 pizzerias in Europe and regularly holds the crown as the best pizza in Ireland.

Walking in, you’ll be greeted by the giant menu taking over most of the wall. It can feel a bit “what do I even order?!” but you’ll have time. Breathe, read, order, and prepare your taste buds for greatness. Maybe google a few ingredients and laugh as you hear the puns ripple through the line of people coming in the door behind you.

Another heads-up: it might look packed, but trust the process. I’ve never been left standing with a tray of pizza waiting for a table. The staff here have service down to a fine art. They run this place like absolute pros. Huge respect for this!


🍕 The Pizza

Next level. I’ve devoured The Stinger and Pep Guardijala multiple times. Both absolute knockouts. Think perfect chewy crusts with just the right amount of char, incredible toppings, and that flavour balance you rarely get.

I’ve brought friends here, including self-proclaimed pizza purists from New York (“we know good pizza”). They were converted but couldn’t decide if it was the epic pizza or the smooth, friendly service. Maybe both. Either way, plates were cleared, New York pizza was beaten.

Also when you get handed a table number with Eric Cantona 7 on it, you know you’re in a serious place.


Why Dough Bros?

Honestly, Dough Bros just feels like Galway. The vibe, the people, the music, the walls. It’s effortlessly cool without trying too hard. I’m calling it: this might be the most Galway restaurant in Galway. Or even the best pizza in Ireland?
