From now on, the strong dark aroma of Café du Monde Coffee will always remind me of Christmas in Wilmington. Each morning my now brother-in-law would brew up this timeless dark-roasted coffee and earthy notes of chicory would fill the kitchen. He brewed using the Wolf Gourmet Coffee machine, bringing this classic New Orleans coffee into a new dimension

A Glimpse into Café du Monde’s Legacy
I got the chance to go back when I was 19 and totally knew then it was a NOLA establishment but maybe I didn’t fully give it the credit that I now know it as today 15 years later.
It was established in 1862 in the heart of New Orleans’ French Market, Café du Monde has been a cornerstone of the city’s rich food & coffee culture. Known for its iconic coffee and chicory blend, the café has remained a family-owned establishment, preserving its traditional offerings through generations. The addition of chicory, a practice dating back to the Civil War era, was initially a means to stretch coffee supplies but has since become a defining characteristic of New Orleans-style coffee.
Aroma & Taste

Café Du Monde Coffee and Chicory doesn’t just waft into your senses—it barrels in with the full confidence of a brass band marching down Decatur Street. There’s roasted coffee, sure, but it’s the chicory that steals the show with its toasted, earthy swagger. That unmistakable New Orleans aroma—woody, smoky, rich—fills your kitchen and transports you to a wrought iron table outside the original French Market.
On the palate, it’s bold and bittersweet. The coffee is dark and full-bodied, but the chicory rounds off the edges with a roasted warmth that lingers. There’s a low hum of cocoa, a deep woodiness like an old cigar box, and something almost herbal, like burnt sugar stirred into a campfire. No bright acidity or fruit bombs here—just unapologetic depth and southern charm.
Brewing with the Wolf Filter Coffee Machine
Brewed in the 10 cup tank-like precision of the Wolf Gourmet Programmable Coffee System, (to give it it’s full title) this old-school New Orleans classic meets modern kitchen tech—and the result is something close to divine. We dialed in the “Accu-Brew” setting with a strong brew strength and let the machine’s internal scale handle the ratios. The thermal carafe kept it piping hot with no burnt aftertaste, which is crucial when you’re sipping something as bold and bitter-beautiful as this.
The Wolf pulls out Café Du Monde’s deeper tones—darker caramel, subtle tobacco, and that smoky, chicory note that cuts through cream like a second line through silence.

The thermal carafe ensures the coffee remains hot without the risk of over-extraction (which is very handy to have), preserving the integrity of the chicory-infused blend.
If you’re used to dainty pour-overs and gooseberry tasting notes, prepare to get hit in the chest with this one. And thank it.
This isn’t your chill Sunday morning brew. It’s brass bands echoing down narrow alleys. It’s powdered sugar in the air, laughter spilling out of open doors, and something slightly chaotic but totally comforting about it all.
Drinking Café Du Monde Coffee is like putting on an old swing band record you don’t analyze the notes, you feel the swing. You don’t ask for tasting clarity; you ask for another cup. And when brewed in the Wolf? That vibe becomes ritual.
The Authentic Café Du Monde Coffee Experience
Apparently add a splash of evaporated milk for the authentic New Orleans café au lait experience. Evaporated milk’s creamy richness melts perfectly into the bitter bite of the chicory, softening the edges while keeping that soul intact…. I did not do this.
