Alright, folks, let me introduce you to a little whiskey venture of mine (& Micheal Cowman) that’s close to the heart—Redacted Independent Bottlers. Now, if you think this is just another whiskey company churning out bottles for the sake of it, you’re way off the mark (we don’t have the budget for successful things like that). “We’re here to shake things up, push boundaries, and take on Jack Daniels.“
Here’s the thing: We got tired of waiting around for someone else to make the whiskey we wanted to drink. So, we thought, “Why not take matters into my own hands?”. We were hungover driving from Wexford to Dublin and probably made a terrible decision to put our life savings into whiskey but sure, you can’t take it with you (but no one has verified this yet) anyway, that’s how Redacted Whiskey came to be—a proper labor of love and a passion project that turned into a full-blown obsession.
What We’re All About
At Redacted Independent Bottlers, we’re not just slapping labels on bottles and calling it a day, most of the time we forget the labels on bottling day or call it a day with 6 cases left to do – it’s our company we can not work if we want to. But we’re hunters of flavour, explorers of cask finishes, and storytellers of the barrel-aged kind. We dig into Ireland’s rich whiskey heritage but with a rebellious twist. Think crazy rare casks, unconventional aging methods, and a commitment to making whiskey that’s as memorable as a sunrise pint after a big night out and then putting one of the best designed pieces of Irish art you will ever see on a whiskey bottle!
Each release is small-batch, and, quite frankly, something we’re damn proud of. We’re talking whiskies with interesting flavour profiles, unexpected cask finishes, and enough character to keep you coming back for another sip—and maybe another story.
The Whiskey Line-Up
Our Redacted Whiskey lineup isn’t for the faint-hearted. It’s for those who appreciate the journey of a whiskey, from distillation to cask to glass, and want to experience something truly unique. We handpick our liquid from Ireland’s best distilleries, but the real magic happens when we get our hands on it. A bit of experimenting, a whole lot of patience, and voilà—we have a whiskey that’s distinctly Redacted. We cannot explain our magic, but magic it is.
However don’t expect to find these bottles on every shelf. We keep it limited because we like to keep things special. It’s whiskey that’ll make you pause, savour, and maybe even contemplate the finer things in life—or just appreciate a damn fine drink. DRINK IT!
Why We Do It
Because we’re whiskey nerds at heart, plain and simple. We’re not here to just fill glasses; we’re here to have the craic and create something that makes us happy! It’s about the thrill of the unknown, the excitement of working with a new Irish artist and the joy of sharing something genuinely special with people who get it. And sure, sometimes we take a risk that makes us wonder if we’ve lost the plot, but isn’t that half the fun? Our accountant disagrees. It was rhetorical mate!!
At the end of the day, Redacted whiskey is a love letter to whiskey—done our way. No marketing fluff, just honest-to-goodness liquid gold, shaped by tradition and fuelled by a restless desire to keep things interesting. With some tongue in cheek bits along the way.
