Why We Went

When people talk about the Best Cocktail Bar in Dublin, Bar 1661 comes up again and again and being a huge fan of that bar it was no surprise that The Sackville Lounge (which is their second venue) was also going to be known for their mixed drinks.

Quietly.

Not in a loud, TikTok-hyped way — more in that people who know, know way.

I’ve been here a few times now, and it’s one of those places you keep going back to. Not just for the drinks, but for the way it all comes together, the room, the service, the detail. On that, each time I have been here it has been a different experience, from relaxed afternoon chats to loud music on a Saturday night.


The Room & First Impressions of The Sackville Lounge

This place knows exactly what it’s doing.

Dark, cosy, and a bit of that old-school glitz and glamour Gatsby-esque without being tacky. It leans into a modern cocktail lounge / speakeasy feel (even though it’s not actually a speakeasy… there’s a big red neon sign outside, you won’t miss it).

Behind the bar, you’ve got a large crystal-clear block of ice slowly melting, chipped away drink by drink. It’s the kind of detail you usually only see in top bars in New York or London.

It feels premium, but not pretentious.

The menu is sharp.

Clean, stylish, and to the point, no clutter, no over-explaining but the staff are on hand to tell you everything you need to know.

These are not light, easy, sugary drinks.

They lean heavily into:

What We Drank

We didn’t hold back here.

And fair warning, this is not a low-abv menu. These are proper, spirit-forward cocktails. If you go at this the way we did, you’ll know about it.

Also worth noting: the stairs down to the toilets can be a bit of a mission after a few, so maybe leave the Snapchat for another time.


Olive Oil Martini

This sets the tone straight away.

Silky, savoury, and properly structured housed in an ice cold glass. The olive oil gives it a rounded mouthfeel without being gimmicky. It’s still unmistakably a martini just elevated.

A great example of what The Sackville Lounge does well: classic foundation, subtle twist, no nonsense.

Their house martini. Poured table side (which makes it taste better!).

Clean, cold, and sharp as you’d hope but with just enough personality to make it feel like their version.


Black Manhattan

Dark, rich, and a bit moodier than your standard Manhattan.

You’re getting depth here:spice, sweetness, and that whiskey backbone holding it all together. Proper old skool late-night drink.

This is exactly the kind of cocktail that suits the room.


Sazerac (Sort Of… but not really)

Right – this one needs context.

There’s a large block of ice. There’s no absinthe. So technically… not a Sazerac.

But I spoke to the team, they call it that, so we move on.

Because here’s the thing: This was one of the best drinks I’ve had in the last year or two.

Incredible balance, weight, and flavour.

Call it whatever you want… it’s class.


Spicy Margarita

A proper punch of heat without blowing your head off.

Well balanced, still refreshing, but definitely leans into that Sackville style, bold, confident, not watered down.

If you’re expecting a light, beachy margarita… you’re in the wrong place. The beach is far far away.


Miso Penicillin

Listen, I think when Sam Ross came up with the Penicillin cocktail it became one of the best modern cocktails about. I love it as a drink to drink and make. So when I see it or a veriation of it I typically order it: ginger, lemon and peat whats not to love?!

You’ve got that smoky Scotch backbone, but the miso adds a savoury depth that actually works far better than it sounds.

Complex with a slightly citric kick and a lick of smoke, and very well executed.


Belfast Coffee & Irish Coffee

Of course The Sackville Lounge has to have a Belfast Coffee on the menu, they are the sister to Bar 1661.

Cold brew, Ban Poitín, cream smooth, slightly dangerous, and very vert easy to drink.

If you want something that keeps it classic and warms you up you’ve alway got the original Irish classic cocktail of the Irish Coffee. This is where they nod back to Irish tradition, but still keep it sharp.

Rich, balanced, not overly sweet. It does exactly what it says on the tin.

Another thing they do differently, they don’t try to do everything.

Instead, they focus on a tight, curated selection of top-tier spirits.

Even when it’s busy (and it does get busy) the floor team are switched on. They know where to put you, how to move the room, and how to keep things flowing.

One Saturday night I was in, it was loud. Proper loud (maybe I’m getting old, but it was pushing it).

That said, the service never dropped. Drinks were still spot on, timing was right, everything kept moving.

On quieter visits, it’s even better. You really get to appreciate how well-run the place is.

Sackville Lounge feels like it’s operating on its own wavelength.

It’s not chasing trends. It’s not trying to be Instagram-famous.

It’s just focused on:
