The moment the water hit this Bailies Coffee Microlot the bed of grounds in the Chemex, there was a dramatic bloom: lush, lively, and intensely aromatic. Light floral notes rose and joined a tart fruit leapin’ out of the carafe before the brew even began to drip. You know you’re in for something special when the aroma alone pulls you in this hard.
The roast is light, with uniform, tightly-structured beans that hint at expert processing. Everything from the packaging to the grind screamed meticulous care and that this cup was going to demand your full attention.
Also I love the new Bailies bags, not super different from their previous design but the touch and feel is so so so smooth. Feel it…smoooooth!
About this Bailies Coffee Microlot

I have tried their El Limonar a while ago and really did enjoy it. This lot of Colombia Inmaculada Sudan Rume is a shining example of what happens when rare genetics, terroir, and processing all align. Grown in Pichindé, Cali a lush, high-altitude region nestled within the Andean foothills this coffee hails from Inmaculada Coffee Farms, pioneers in cultivating exotic varietals with scientific precision and environmental care.
The Sudan Rume varietal is a rare Arabica heirloom, native to South Sudan and prized for its floral intensity and complex structure. Naturally processed and dried with extreme attention to detail, this microlot bursts with clean, expressive flavours.
I’m told to expect a vibrant cup with tasting notes of rhubarb, strawberry, and rose. All of the signed point towards a layered profile that brings both perfumed and juicy notes, with high-toned acidity and a long, elegant finish. Think summer fruits and botanical florals (which I got on the aroma instantly) with just enough structure to keep things balanced.

I have brewed this also on Aeropress and this Sudan Rume offers a tasting experience that’s more perfumery than pantry, delicate, ephemeral, and finessed.

Flavour Notes from Inmaculada Sudan Rume

Poured into my favourite coffee beaker designed for Mo Chara in Dundalk by Etaoin O’Reilly Ceramics.
- Did I get Rhubarb? It was tangy and sharp, this hits up front with a crisp acidity that immediately wakes the palate.
- Did I get Strawberry? Definetly a nice ripeness to it and it’s clean, adding juicy sweetness through the mid-palate.
- Did I get Rose? The flora notes on the aroma stand tall and come back to finish delicate, and aromatic.
The structure of this coffee is outstanding. It’s high-acid and fruit-forward, yet not overwhelming — lifted by the floral complexity that Sudan Rume is so celebrated for. Think fresh, sun-warmed berries.

The Chemex brought nice clarity to the profile, really letting the floral and fruit notes shine. The bloom was super active a telltale sign of freshness and natural processing.

This is an expressive, articulate cup that rewards slow drinking and close attention.
Colombia Inmaculada Sudan Rume from Bailies is a standout even in a crowded field that I have tried in terms of flavour and over all bean quality.
If you’re into expressive, floral coffees and want something that leans more toward tea-like elegance than chocolatey comfort, this one is for you. One of the best aromans in a cup I’ve had this year.
