Our Visit to Uno Mas

My wife and I visited between Christmas and New Year, chasing something bright, bold, and brimming with flavour and Uno Mas delivered in style. Also it seem to be on every bloggers recommendation so, why not eh?

We didn’t reserve which was a risk but thankfully they had two seats at the bar top for us. Which turned out to be the best seats in the house – as long as you don’t mind people squeezing past you every now and again.

The space is warm and buzzy think dark wood, trendy fixtures and cozy lighting. Service was effortlessly charming and genuinely knowledgeable, especially from our wonderful host who made everything feel like on the ball with the right amount of attention and conversation.

What We Ate at Uno Mas

The menu is laid out simply, with the para picar section taking centre stage with classic Spanish tapas designed for grazing and sharing. It’s dated daily, so dishes can change, but the standouts tend to stick around.

First off: the Gilda skewers. Anchovy, olive, and pickled pepper perfection—a salty, zippy opener that sets the tone for what’s to come.

Then came the Padron peppers, blistered and salty, and a dish of grilled squid and octopus served à la plancha with chimichurri and inky dots of squid ink. Both were fire-grilled to perfection, all smoke and tenderness.

Next? Anchovies in ajo blanco creamy almond sauce, olive oil, and toast. Smooth, nutty, balanced. It was like a masterclass in minimalism.

The potato and onion tortilla arrived warm, topped with aioli and a generous tuft of chives. Light, custardy, and deeply satisfying.

And as always don’t let a good salad dish pass you by, came with roasted red pepper, blackened squash, walnuts, and crisped vegetable chips, grounded by a slick of romesco.

We skipped mains and desserts this time, but everything we ordered is something we’d go back for without hesitation. There’s clearly something here for everyone, and the staff are always on hand knowledgeable, relaxed, and happy to guide you if you need it.

Every dish was elegant, but full of character. A meal you eat slowly around great conversation.

Wine

Uno Mas has one of the most thoughtful wine lists in Dublin. Organic, natural-leaning, and heavy on Spanish producers. We sipped our way through a minerally rosado that paired beautifully with the seafood, and even their water feels elevated.

They also do sparkling water on tap which I love, it’s ice cold and I drink it by the gallon – not wine of course but this deserves an additional point.


The Bigger Picture

Uno Mas isn’t just another small wine bar. It carries serious clout as the younger sibling of Etto, where Liz Matthews and Simon Barrett nailed the formula: simple but sophisticated food, excellent wine, and a room that hums with conversation.

It does also have Bib Gourmand for Michelin with a quote that fully shares my sentiments ” The best seats in the house are at the counter in this buzzing, well-priced…”. This is not a star but it does highlight some amazing cooking and worth having a look through to find some wonderful spots.

Here, that same DNA shows: a chic, understated Madrid-style energy, packed shoulder-to-shoulder with chefs, suits, regulars, and foodies. It’s the kind of place where the room is as entertaining as the food.
