So this week, we’re diving into a cask-strength delight from Killowen Distillery, one of Ireland’s smallest and most passionate producers. This whiskey, however, was actually distilled at Great Northern Distillery but aged and masterfully finished by the Killowen team in the Mourne Mountains of County Down. What we have here is the Killwoen Rum & Raisin Irish Single Malt, a six-year-old stunner with an ABV of 55%, bottled without chill filtration. Let’s see if it lives up to its flavourful name!

The Backstory: A Barrel Balancing Act

This whiskey is all about the art of maturation, using ex-Bourbon barrels, dark rum casks, and Pedro Ximénez Sherry butts. What makes it even more interesting is that the rum casks used here are from Killowen’s very own rum production, adding a personal and unique touch to the flavour profile. This is batch number five, bottle 138 out of just 996 an exclusive treat for sure however this is a core range whiskey which is done in batched. So it would be Killowen Rum & Raisin Irish Single Malt Batch X… you see?

On the Nose:

The aroma is an enticing dance of tropical dried fruits and the rich sweetness of Pedro Ximénez Sherry. You get wafts of desiccated coconut, almost like the scent of a freshly made bowl of overnight oats. There’s also a subtle vanilla backbone coming from the ex-Bourbon cask influence, tying everything together with a soft, creamy edge. It’s a vibrant and inviting nose, with layers that hint at the complexity to come.

The Palate:

First sip, and you’re hit with an explosion of flavour. The rum and raisin character is front and centre, with those rum cask influences adding a tropical, almost caramelised fruit note. The Pedro Ximénez sweetness is there, balancing the tropical tones with rich, dark fruit flavours. There’s even that familiar vanilla from the Bourbon barrels, adding a creamy, mellow undertone.

Think of it as a dessert whiskey, with flavours that remind you of rum-soaked raisins, a touch of gingerbread spice, and a dusting of coconut. The flavours play together beautifully, making for a whiskey that’s both bold and harmonious.

The Finish:

At 55% ABV, the finish doesn’t just linger it commands your palate. The higher alcohol content carries the flavours well, leaving a lasting impression of sweet, malty goodness. There’s a lovely warmth that spreads across your mouth, with notes of spiced rum, dark chocolate, and a hint of nutty oak. It’s the kind of finish that makes you sit back and savour the experience.
