This week, we’re diving into a game-changer in the Irish whiskey world Two Stacks Pillars of Creation. Known for breaking the mould, Two Stacks Whiskey has released the first in their vintage series, blending spirits from three independent distilleries:
- 10-Year-Old Single Malt from Dingle
- 8-Year-Old Pot Still from Echlinville
- 4-Year-Old Pot Still from Killowen
These whiskies are finished in a cream sherry cask, adding depth and complexity to this one-of-a-kind blend.
The Story Behind Two Stacks Whiskey: A New Chapter

Tasting Notes on Two Stacks Pillars of Creation
- On the Nose
Straight away, you get a massive cherry influence, likely from the cream sherry cask. There’s aged oak and a deep richness that fills the air with aromas of blackberry jam and apricot. The smell alone is enough to make your mouth water complex and mature. - The Palate
The first sip reveals the bourbon influence with layers of vanilla and creme brûlée. It evolves into flavours of apricot, blackberry, and even a touch of fresh pencil shavings surprisingly pleasant and adding a sophisticated twist. The mouthfeel is velvety, and the flavours keep unfolding, moving from honey-raisin to light lime and peppermint. - The Finish
The cream sherry cask influence stays strong, with walnut and nectar notes lingering. The pot still spices, like white pepper and nutmeg, carry through to the end, giving a warm and satisfying finish. It’s complex, sophisticated, and the kind of whiskey that evolves with every sip.
The Verdict:

Score: “Here, That’s Class” (7.6/10)
