Dingle, already celebrated for its stunning coastline and lively atmosphere, has earned its place as one of Ireland’s premier food destinations. At the heart of this culinary revolution is SOLAS, a standout restaurant offering an upscale dining experience infused with the essence of the Ireland and being called by some the Best Restaurant in Dingle.
SOLAS DINGLE: A Beacon of Culinary Irish Innovation

Situated in the bustling streets of Dingle, SOLAS lives up to its name, meaning “light” in Irish. It brightens the local food scene with a menu that perfectly balances tradition and modernity. The atmosphere is a welcoming blend of contemporary elegance and laid-back coastal charm, making it an ideal spot for an unforgettable meal. Think Irish tapas (not crass like bags of crisps and cocktail sausages), small plates done with a Continental European flair.
Farm-to-Table Excellence in the Best Restaurant in Dingle

The chefs at SOLAS are passionate about showcasing the best of County Kerry’s bounty. Expect dishes featuring ultra-fresh produce from nearby farms and seafood pulled straight from Dingle Bay. Menu highlights include succulent beef carpaccio, Atlantic cod served with foraged sea herbs, and innovative vegetarian options that are as thoughtfully prepared as their meat and fish counterparts.
Global Flavours with Irish Roots

So I was on my own and walked in to a very busy small little restaurant, however it was one of the 10 sunny days in Ireland a year so they had a handy wee table for me out the front. The menu is split up pretty clearly for 2 people however the server was super kind to see I am a greedy fella and on my own so she suggested I order many things but she would half the sizes (and the cost) – so I took her advice and jumped in! Each dish was a mini masterclass in flavour, proving that Irish cuisine can be both rooted in tradition and thrillingly contemporary.
Not totally sure what I ordered except for the Rock Oysters with trout caviar, yuzu & soy (which I ordered another of) along with the scallop, crab tartlet and possibly the show stopping dish that was recommended by Finn, the man behind the bar at Dick Macks, was Iberico Chorizo Croquettes with aged manchego. It was so good that after one bite I went to order another which I got warned against as they are super filling and heavy – this was great advise.

Oh and I almost forgot this amazing dish: Andalusian Smoked & Cured Sardines, Tomato & Olive, Nori Aioli on Cracker Bread – it may have been the stand out… Or I might have to go back and try them all again. Maybe all of these and my need to return gives it the Best Restaurant in Dingle medal?
Drinks That Dazzle
I didn’t drink as this trip was less than two weeks before I competed in the Welsh IronMan but from reading the drinks menu and seeing what was on the tables of others inside there was a lot complementing the exceptional food, SOLAS boasts a carefully curated wine list and a cocktail menu that features local and seasonal ingredients. Whether you opt for a glass of wine that perfectly pairs with your meal or a cocktail infused with wild Irish botanicals, the drinks here are as thoughtfully crafted as the cuisine.
