I spent an hour one morning at Brew Lab on South Richmond Street, Dublin, and let me say this right off the top: if you’re into clean, precise, dialled-in coffee with top-tier pastries and a minimalist space that still feels like a warm hug, you’re going to want to pay attention.
What’s the Brew Lab Story?
Brew Lab isn’t just a cute name it’s exactly what it sounds like: a specialty coffee bar where every cup is treated like a delicious science experiment. Founded by Ciaran and Jane, the café is built on an ethos of precision brewing, ethically sourced beans, and a rotating selection of seasonal roasters from around Europe.
Their menu features four original espresso options at any given time, alongside a rotating brew bar selection. This isn’t about getting you in and out with a flat white and a stale croissant—it’s about craft, clarity, and coffee that tells a story.

Even better? 80% of their coffee is sourced from Irish roasters, with the remaining 20% coming from standout producers across Europe. That means you’re tasting the best of Irish coffee, elevated by international expertise. Look out for the likes of Cloud Picker, Calendar Coffee, and The Barn, alongside state-of-the-art brewing equipment and baristas who talk flavour notes like whiskey nerds talk about drams. This place isn’t about volume—it’s about flavour and experience. More than a café, Brew Lab is a coffee concept space. Think espresso bar meets brew bar, grounded in competition-style brewing standards, and executed with the confidence of people who really, truly know what they’re doing.
What Did I Order?
- – A Flat White served in a sleek, handleless ceramic cup, topped with a perfect swan latte art that made me feel slightly guilty to ruin. Balanced, creamy, and just enough acidity to keep you awake through a Monday meeting.
- – An almond croissant that was crispy, chewy, buttery, and flaked like a dream. Think Parisian pastry but with Irish attitude.
- – And because restraint isn’t in my vocabulary: a Peanut Butter Caramel Cup for the road.
A handleless cup, with great latte art served on a board with a glass of chilled water (without ice) is as close to the perfect coffee presentation as can be – it was then that I really knew this place was top class!

The interior is stripped back but thoughtful—raw wood slab tables, tree-stump stools, and concrete floors that make your latte feel ten percent more important. The space is designed for calm caffeine rituals, not rushed takeaway chaos, although there still is a wee bite of that.
It’s the kind of spot where you can linger over your cup or sit at their brew bar and get a great pour over with some coffee education. I sat at the back of the shop which was full but somehow always seemed to have space for more people.
